    Domain profile to workgroup profile?

Changes with computers at work - need to take existing domain profiles and convert/copy them to workgroup profiles because we don't need a server for just two computers that only need to talk to each other and the internet. Want to copy/convert profiles so that we don't have to re-build the desktops from scratch. Any easy way to do this?

I doubt that you need any of the profiles to configure two computers for peer-to-peer connection.

The desktops do not need to be rebuild. Just log to each one of them and change the Network setting from Domain to Workgroup, and configure the Network around a Cable/DSL Router.

Tried that. Once it reboots in Workgroup mode, the desktop is "blank" like when the machine was fresh out of the box.

Alternate idea - both machines accounts are set up for Administrator permissions. What's involved in re-defining one machine to be the "server" to the other machine using the existing domain profiles instead of switching to workgroup mode?

Your user profile is being created from the local default profile rather than being pulled from the server location which is why you get the "out of the box" look.
Once you have created your local user account on these workststions You should be able to copy the profile contents from your server and use it to replace the newly created local profile contents on each workstation. This should give you the same desktop, icons etc, that you get on your domain workstations.
(Take a backup of the current profiles before you change anything )

Obviously shortcuts are only going to work if the local software has the same directory structure as your domain workstations.
