    It means that the only thing keeping a copy out of it out of our grimy gamer hands is the amount of time it will take them to pack the beehotches into boxes and ship them to stores.

    Going gold means the game is finished and ready for mass producing and packaging.

    I think it has to do with the fact that the first master copy of the game (or product) is burnt onto a gold colored CD. This is the one they use to produce other ones or something like that.
