You're chiseling the hinge mortise, is that it?

Chisel is used bevel side up, flat side down.

Sharp end towards the wood (JUST KIDDING, couldn't resist )

Mark the mortise location carefully. This is the most important part, if it's wrong the door won't hang properly, and it's usually hard to correct after it's cut!!!

With the chisel at a 90 degree angle, hold it on the marked line (bevel towards the mortise) & strike it to score the line & define the area.

Holding it at a slight angle, maybe 30 degrees or less, scrape wood from the mortise area until you've cleared out enough that the hinge lies flush.

Don't overdo it & take out too much. Light mallet strokes are usually enough, pounding on it can drive it too deep & split the wood.

hanging a door can be a bear, first are you replacing a door, and the jamb already has the hinges , I prefere to install the hinges on the jamb first then position the door, blocks wedges, extra hands, and mark the cut outs on the door,
If you have or can borrow an electric hand router, that is best for a clean even recess for the hinges, other wise just a VERRY sharp chisel and patience, if the chisel is sharp little hammer use is needed except to square the edges.

alondra.. router! ? i cut the doors off with a hand saw, and i'm all i got as far as extra hands go,, i have to do!
i have marked the hinge placement according to the old doors,, (they are full of holes thanks to son) i am hanging new ones and if he does it again will take hammer to him just like maxwell... just kidding,, really will use rubber mallot. or whatever cause the tail aint gonna wag the dog no more!

OK, I've been trying to find a link to guide you with illustrations, no luck so far.
Is there a library nearby?? If so they should have the "Time-Life Home Improvement" series of books, which is geared towards beginners and has great illustrations.

"Baby bites" is a fair description, after all you're NOT taking out big chunks, just a small cutout about 1/8 deep.

Using the old doors as a placement guide should work.

Ed a Library?? that means I would have to look before I lept!
heck I have the hinges on the new door, just taking a procrastination break before I hang the new one and find out it's great if you don't touch it!

Sounds like you just about got it licked.

can a hinge be on upside down? not backwards, because the unpainted sides are against the door and jam, but upside down and not work? the bottom one is doing ok the top keeps trying to tweak and not close.(actually i cant close the door without it ripping out of the wall...

ok well it closes almost,, sheesh! now its too wide, way to wide, i tell ya if i could let something go i do think i would but...
    dang.
at what point do i break down an buy a belt sander!
    well, a half hour later,
i just can't do it by myself, darn.,
any suggestions, what do you guys do when you run into a wall like this?

The easiest way to hang a door is buy a pre-hung door and replace it all! Ya, getting lazy in my old age
