Try www.linux.org, there are many of so called minimalistic distributions. You can get linux running from one floppy. Some of those distributions are specifically meant for older computers...

I also think that Ghost can be a good solution. Once you setup your system and you are happy with it, just make an image of system disk (by using Ghost) and you can restore it at any time...
