At what point does more RAM not make a difference, currently I have a P2 233 with 64MB RAM. It gets used for a lot of gaming and some business apps, as well as SETI@Home which runs in the background. With the prices as cheap as they are (on pricewatch) would it be worth it to pick up a 128MB chip? Would there be much of a performance boost?
Depends on what chipset you have. I could be a little off on the numbers, but the HX chipset would cache up to 384M, but the TX and VX only cached 64M. If you go above 64M on a TX chipset, then you will lose memory performance, but it might still offset some drive thrashing from virtual memory.
Most single cpu sys P2's will not benefit much after 256M and most dual cpu P2's will stop benefitting at about 512M.

What about the LX chipset?
Don't worry about LX. BX chipset. They can cache up to 1Gb of RAM (enough for you ???)
GX chipset (Intel Xeon) can cache up to 2Gb.

BTW, I would definitely upgrade to 128Mb. It is worth it and RAM is so cheap...

Don't forget that most lx bx mobo don't support 256mb on one stick
ABIT BP6 does
