I'm not sure iffin I'm following you?

You recieve an email from somebody and you want to add them to your contacts address book (else how can you be replying). To do this (fyi, this is for Outlook97, but I'm guessing it will still work, as this has been a feature since I first used Exchange) right click on the "From" name. The popup will allow you to add to Contacts or Personal Address book and some other things.

Does this answer your question?

Outlook 2000 menu bar:

Tools/Options/Preferences/Email Options

The bottom box needs a check mark.

Also I donot think that you can add a person to your address book from your reply window. you can add them from their message before you reply
