I bought two PIII 700/256/100/1.65v S1 SL3XM made in Costa Rica. Are these Katmai, Coppermine or what? They don't work in my motherboard even though it supports PIII CPUs.
The docs do note that Deschutes and Coppermine designs are not supported...did I buy the wrong chips?

The processors you bought are Coppermines.You did buy the wrong chips.I think the best you can put in it is a Celeron 500 (I believe that was the last non-coppermine Celeron).
