http://www.amazing.com/ has an amazing faq, but it hasnt been updated in months, but you should still find it extremely usefull. Your server daemons will obviously depend on your os choice. Assuming your running a version of unix, apache for web and sendmail for mail are the obvious and best choices. If you run NT, IIS is the obvious server choice, cause is included with NT, but i'm a fan of o'reilly's website. Dont really know much about NT mail servers as i run sendmail, but i've heard good things about slmail. Other little tidbits... Not sure of the $$$ situation, but if you've got the cash, definately go with USR/3Com total control racks, simply amazing. If your on a tighter budget, you cant go wrong with livingston portmasters. If you've got any more questions, ask away...

good luck
