I know that Windows 2000 will take advantage of the dual processors but I'm wondering if Windows 98 will at least run? Using 1 processor of course.

Of course it will only be using one processor because Win98 doesn't support SMP. To get the full benifits of a dual-processor system get a OS that supports SMP. Some examples are: Win2000, BeOS, or Linux.
