I have pictures of a few people I need to remove the backgrounds from so that I just leave white all around them. What is the best way to do this so that it looks professional? What is the best software to do it with?

This is going to sound pretty rinky-dink, but open your picture with any paintshop program (even windows paint...). Next, enlarge it several times to make it really big. Now use your "eraser" to well to erase the background. Since it's soo big, it'll be much easier to do this without "harming" your original image. Then reduce it to original size, check to see how you've done, then save it under another file name. That way you still have your original.

This is time consuming, but with the software I have, well as far as I know, it's all I can do.

Good luck 'til someone posts a better and faster way.

use a lasso tool and get go around the people in the pic, as close as you can comfortable, then zoom and use a small air brush, then it won't be so sharp, but if the pic is pretty low res., you might not be able to get it that nice, i think photoshop has a filter/tool or something that will also do this, i don’t know how

If you have Photoshop 2.0 or above its easy. Create a new blank image save it . Open the photo of your choice then select change background and use the blank as your new background. It,s alot easier than the eraser method.
