Whats the difference between EIDE and a SCSI hard drive? is there anything that makes one better than the other or extra cable i have to hookup to get it working?

The difference is in performance and money.
IDE is teh standard built into almost every motherboard on the market, and the cables are very cheap. Bad thing is only 2 devices can be connected to a single IDE controller channel, and with most boards, this limits you to 4 drives total (some boards have extra IDE ports of higher speed ratings ( ATA66) and will give a total of 8 device connections)

IDE is good, and it's hard to justify buying SCSI over the performance an IDE 7200 RPM hard drive can give, as SCSI stuff requires an adapter/controller plus expensive cables.
The benefit of SCSI is up to 31 additional devices on a single channel (plus the controller for a total of 32), and the fact it has greater througput speed. They also typically do not load teh CPU down during drive access like IDE does.
