I have built I dont know how many systems, but one thing I cannot figure out is:

What is the difference between Ultra ATA and Ultra DMA? Aren't they the same thing? or not? Is one faster than the other? Drives all seem about the same price, regardless from what I can tell. TIA!

Basically, yes they are the same. The circuitry of an Ultra ATA device allows for Ultra DMA.
