How much of a performance boost would I gain by getting rid of my old IDE 8mb cache hard drives and replaceing them with those new 16mb cache SATA drives on the market now ?

Ditto. :) If you already have a large 8mb drive then it's not really worth the upgrade unless you really need the space.
