When I built my computer, I added an extra fan for additional (and probably unnecessary) cooling. I'm getting tired of listening to it and would like to put it on some kind of a thermostat. Any ideas??

I know of someone who did that inside an amateur radio repeater cabinet... they used a thermisistor (thermal resistor) of a certain value, that once the temperature reaches that level, the fan kicks in. E-mail me, and I can get you the e-mail address of the gentelman who did this, and he should be able to point you in the right direction.

I'd say you can't really cool too much - get a better fan with bearings. It's more stress on your system's power supply and on the fan for it to constantly turn on and off. Better to leave it running all of the time.
