I am not an engineer and for those of you who are, will we be seeing SATA CD/DVD drives in the future or is there a reason not to do that?

CD/DVD drives can't really utilize the bus speed that sata can provide. A cd/dvd usually maxxes out at 6900 rpm, and that's on cd-read. Even in good manufacturers, that comes at the cost of high -db (loud!) due to the fact that you have that unbalanced and unanchored "platter" wobbling on a spindle.

Now, this may all change, as the interest in cd/dvd technology has been on hold with manufacturers, as the industry itself is still in a state of flux over which format to call industry standard, Blu-ray or HD DVD format...
