I have a ATI 9800 Pro in my desktop, which has a S-video out. And I also have a IBM T41 Laptop. My desktop ussually uses a CRT But I hate taking it to LAN Parties and over to friends houses.

Is there any way I could get my desktop to display through my laptop's monitor?

If your laptop has a "video in" it would certainly be possible. If not then I would say your out of luck.

In brief: No you can't, not in a useful manner. Sure, you could plug a PCMCIA TV card into the notebook, and run your desktop's TV-out back into that. Image quality is going to stink though.
