I was gonna test my system with v-sync on and off, but I can't find out how to change the setting? I am running a PII 333mhz with 128M of SDRAM and a 16M Viper550 using the Detonator2.08 drivers from Nvidia! How do I change V-sync? Also, where can I get a good demo to test my fps? What type of fps should I be pushing in Quake 2 and Half Life? What should I be playing games in 16bit or True 32-bit? 640X480 is the size I use most of the time? Thanks.

Not to rain on your parade or anything, but all the stuff you want to look at is irrelevent. What is far more important is...
Are you happy with the way your system displays the games?
If you want more colors, use 32 bit, more speed, use 16 bit. Game running smooth? Leave it. Game choppy, lower color depth or resolution.
There is no one set of rules pertaining to what a game should look or run like. If your system runs at 35 frames per second and you are happy, then leave it. If the guy next door has his running at 200 fps, good for him, it isn't going to improve your game any.

V-sync is an important part of accurately benchmarking your system, but it is best to leave it on for actually playing. With it disabled, you see 'tearing' as the screen refreshes in between frames. However, with it enabled, benchmarks are dropped by a bit and top out at your refresh rate.
If you stick to 640x480, your system should be able to push that resolution quite well in 32 bit color. Like a Bill says, run what works. If the 32bit eyecandy looks good, run it. If it is too slow, back it down to 16 bit.
