I have an IBM PC ( not clone ) running an 8088 processor using AMI Bios and I can't enter the BIOS. I think I have tried every combination of keys including:
Delete, Ctrl+alt+esc, ctrl+alt, ctrl+F1.
Anyone have any other ideas?

F1 or F8,I'm pretty sure it's F8.

I don't think you will be able to get into the bios on one of those PC's since those older IBM's are like Compaq, you need a bios boot disk in order to enter it. The PS/2 are like this.

The old 8088 had control cards for the flopy & hard drives with the bos for the dirves on the card I dont remember the dubug # to get to them there were several
the clock was on it own card
the printer & com ports needed cards

Try F2 or F10. If that doesn't work unplug your keyboard and boot up then it'll give an error message then plug the keyboard in and hit F1.
