what do you think would be the chances of this game going to either Gamecube or Playstation 2?

I think it's going to be likely unless they have an agreement with MircoSoft, because if it does change LucasArts will get more money. I think either it will come out relatively sooner like in 3 to 4 months or much later as 1-2 years.
