Everyone does all this home PC building...Is it possible to get the little active matrix screen/case/keyboard thing (it is all one piece...right?) and then build your own laptop??

Anything is possible, but be-ware that laptop components,, other than the hard drive and RAM, are typically proprietary - IE - built by a specific manufacturer for their systems, and don't interchange between vendors or even different models of the same vendor from year to year.

It will probably be too much trouble to get a compatible set of components together to make a whole system.

The closest thing I've seen to what you are talking about is a system manufacturer called fly-tech out of SE Asia - they made segmented motherboards in cases that weren't much bigger than the average shoe box - They had an external power supply and typically only had two expansion slots - Also - external monitor - not attached. They offered miniature key-boards - also not attached - so you ended up with a tiny CPU but still had to lug around a monitor.....

It's possible but it would be very difficult. There is so many things to take into consideration if you were building your laptop such as heat, layout etc. Also like Axel mentioned almost everything is proprietary and there is alot of integration in laptops which would make it very tough to find a compatible set of components.
