the chip densities come in two different sizes now?

what's the difference between 8x32 and 64x64?

They come in 8x, 16x, 32x and 64x. It's all about the amount of RAM per chip or density. Total number and type are all that matters.

8x32 is 256MB
64x64 is 512MB

I think they are both the same density (32MB per chip) with the 64x64 having two 32MB chips laminated together.
